Most of us enjoy our food. It is a delight to the senses as you prepare the food and then eat it. When I say “bacon”, you can almost see it in the pan, hear it sizzle, smell it, feel it crunch under your teeth, and taste it.
Some cultures of the world find it very important to have foods that give a sensation to the mouth like the bubbling that comes from fermented food. For our family, the taste of fermented food matters.
My Mom is a master in fermentation. She learned from her Mother as a necessity to preserve foods. Her best fermented food stuffs are sauerkraut and raspberry wine.
These two items were appreciated in the dead of winter. As kids, we put up with sauerkraut so we could have a trickle of the wine in a cup of tea. The process of fermentation causes some powerful changes to occur in the food as it is prepared.
The enzymes that come of it give us the kind bacteria, or “flora” needed for great digestion. It is a way of boosting our immune system function!
On the food list of The 100 weight loss plan written by Jorge Cruise, there are quite a few. Many of them are on the freebie list that allows you to eat them without worry of blood sugar swings. A few to consider:
- Soy sauce
- Yogurt (FAGE)
- Wine
- Sauerkraut
- Some of the cheeses
- Vinegar
- Sour cream
- Dill Pickles
